Growing up, I hated being my mothers helper in the kitchen. I hated cooking, but these days, it comes so easy to me. You will also be shocked at how much money you can save by making your own home cooked meals. Making your own food is also a way to regulate calorie intakes, as you can control what goes into your food.
Today, I am sharing with you a recipe for my grilled chicken legs. I served this with some jollof spaghetti (not pictured). I was really satisfied with the outcome of this, and that’s why I have decided to share today.
These chicken legs are perfect for the holidays. Are you entertaining a group of people soon? Try these and have everyone licking their fingers.
Recipe
2 garlic cloves
thumb size ginger
1/2 rodo (scotch bonnet) pepper
1/4 onion
3 thyme sprigs
3 tbsp olive oil
3 knorr cubes
Marinade
3 tbsp siracha
1 tbsp teriyaki sauce
1 tbsp oyster sauce
2 tbsp olive oil
I seasoned the chicken overnight with a blend of garlic, ginger, onion, and pepper. I also added in some fresh thyme leaves, Knorr and 1 table spoon of olive oil.
Use a knife to poke through the chicken, so that the seasoning gets into it well.
Ps: You do not have to season overnight (you can season for an hour or more, depending on how much time you have)
Next, put 2 tbsps of olive oil in a clean frying pan.
On high heat, put chicken legs skin down and fry for 2 minutes, then turn heat medium/low and fry until skin is medium brown. *Do not let chicken cook*
Repeat until you are done with all chicken legs.
In a bowl, combine all ingredients for chicken marinade.
Coat chicken legs evenly with marinade and let sit for about 30 minutes.
Place chicken legs in an oven safe bowl, or on foil paper on oven rack. (preferably a bowl, so that the marinade does not lick onto the oven).
Set oven to about 450 degrees Fahrenheit , and cook for 20-30 more minutes until desired tenderness.
These chicken legs were so yummy. I had them with some spaghetti for dinner, and made a chicken/cheese melt with them for breakfast.
